Just curious - some army lists on the website list one or more options under an army list. My questions is... is there any restriction on how many options you can take?

i.e. in the polybian roman list, could I get italian allies through one option AND drop a CM to get another unit of velites?

you can combine options unless forbidden. If you see option 1 do this and option 2 do that, you can combine them.
If it is written (rare) do this or that, you hacve to choose.
